Sake-charzuke (Rice and grilled salted salmon)

INGREDIENTS

60g piece salmon, skin still on
2 tablespoons sea salt
1 cup hot cooked medium grain or sushi rice
½ cup Blancha green tea
½ sheet nori, crumbled or shredded finely

METHOD

Combine salmon and salt in a large bowl and turn to coat the fish in the salt; stand 30 minutes.

Preheat grill to very hot. Brush salt off salmon fillet and grill 5 minutes or until just cooked through; flake coarsely.

To serve, place the rice in a small bowl. Top with flaked salmon. Strain green tea over salmon and rice. Top with shredded nori seaweed.
