Japanese Boiled Rice


1 cup shortgrain rice
1 cup water
2 tablespoons sesame seeds
2 teaspoons salt


Rinse rice until water runs clear. Place in a saucepan with a tight fitting lid. Cover with water. Bring to the boil, reduce heat and cover. Simmer for 12 minutes. Remove lid and place a folded tea-towel over the pan. Return lid and allow to stand for 10 minutes.
Meanwhile place sesame seeds and salt in a small frying pan. Cook until sesame seeds are toasted. Sprinkle over cooked rice.
